Hello! My name is Jeff and I am the Big Ape behind Hungry Monkey Eats. As a huge fan of strong flavor, my ultimate goal is a product that calls attention to every element. That means small batches with fresh ingredients produced and packaged just prior to market or delivery.
What I Make
I currently have three types of Almond Nut Butters for your enjoyment. The first is a classic Almond Butter available in medium or dark roast. For those who like something sweeter, we have an Almond Honey Butter and Almond Date Butter. All of our nut butters are roasted to bring out the rich flavor of the almond.
How I Make it
As a small batch, artisan producer, all of my butters will be made with a melanger – a machine that is likely better known in the world of chocolate-making, though equally adept at pulverizing nuts. A contemporary melanger utilizes old world technology (granite base and grinding stones) packaged neatly into a modern stainless steel drum. This grinding method requires a little more time when compared to modern high speed equipment. But the results are well worth the wait! With friction and heat drastically reduced during production, heat-related degradation is also limited in the final product. In due course, the pulverizing action of the stone wheels, combined with sufficient time and patience, allow for the proper breakdown of the nut, the release of the oils, and tons of buttery goodness for you and me!
